Our extra virgin olive oil comes exclusively from OLIVE GROVES SITES IN THE HEART OF UMBRIA that extend into the communities of Terni, Campello Sul Clitunno, Spoleto and Trevi.
They are located at an altitude of 300 - 600 meters above sea -level and provide for a HIGHEST QUALITY EXTRA VIRGIN within the strict standard of DOP (Denomination of Protected Origin ) Colli Assisi - Spoleto and AIAB (Italian Association for Organic Farming).
The main cultivars of our olives MORAIOLO (70%), and FRANTOIO and LECCINO.
The cultivar Moraiolo prevalent in this hilly, inserted by many centuries in the cold continental environment (which makes it impossible the attack of the olive fruit fly), the soil characteristics ( rich and sunny ) and the modern cultivation techniques ( in absence of chemical treatment ) have all contributed to its outstanding level of quality unattainable in any other environment.
THE OLIVE HARVEST in the months of October and November is carried out entirely by "hand picking", preserving the olives from the traumas caused by falling into the ground, remains intact.
STORAGE OF OLIVE is done in perforated plastic boxes that allow better ventilation thereby avoiding the formation of mold.
OLIVE OIL EXTRACTION is done within 12 hours allowing you to get a Superior Quality extravirgin olive oil.
